Here is the story of how I started making this lower carb gluten-free bread recipe. A friend of mine came to me one day, very excited about some bread I had baked her. “I love your bread”, she said, “but can you please make it without flour and without yeast?”

I told her I would try, but it was no small order! If it didn’t have flour or yeast in it, would it still be ‘bread’? I had never tried to make a gluten-free loaf before. I was under the impression that they were usually expensive to make, containing exotic ingredients like almond flour and the like. However, I was determined to at least attempt it, so I started looking for a recipe.

I came across one mentioned in passing on a blog discussion about making banting bread in a breadmaker in South Africa. It seemed to fit the bill. It turned out that I could make it just with ingredients I had in my kitchen, and most of them very inexpensive (especially if using homemade apple cider vinegar and coconut flour). I baked the bread. My friend loved it. She told her friends about it. Suddenly a lot of people wanted to get loaves from me!

Here are some budget-friendly options for what to use for your gluten-free flour mix:
Two parts of the following:

  • Coconut flour (I use homemade)
  • Ground flax seeds/flax seed meal
  • Chickpea (gram) flour
  • Buckwheat flour
  • Maize meal

and/or one part of the following:

  • Gluten-free oat flour
  • Corn flour (corn starch)
  • Ground sunflower seeds
  • Rye flour

If you are just going wheat-free, not gluten-free, and want a more ‘wholegrain’ loaf add:

  • Crushed barley

For a low-carb bread opt for:

  • Coconut flour
  • Flax seed meal
  • Ground sunflower seeds
  • Chickpea flour

For an ancient grain bread try:

  • Flax seed meal
  • Rye flour
  • Crushed barley
  • Rolled oats

I bake it in my breadmaker, but because it doesn’t have yeast in it, I use the ‘cake’ setting. It’s basically just mixing it and baking it, but it does save me time and dishes. You definitely don’t need a breadmaker for this one!

Ingredients

  • 1 cup warm water
  • 2
  • 1T honey
  • 2T butter/ghee/coconut oil/olive oil
  • 1T apple cider vinegar
  • 3 eggs
  • 1t Himalayan salt
  • 1 ½ cups lower carb/gluten-free flour mix
  • ½ cup seed mix
  • 1 T psyllium husk
  • 1/2t bicarb
  • 1t baking powder

Instructions

  1. Add ingredients to breadmaker in listed order
  2. Cook on cake setting.
  3. Alternatively you can mix ingredients together by hand or in a mixer and bake in the oven for an hour or until risen and done (skewer comes out clean)

Notes

Recipe can be doubled for a full-size loaf
